The Coconut Oil Diet

a must read for diabetics

The Coconut Oil Diet is not like a regular diet with exercise and rigid meal plans. It's more about adding this oil to your diet for its noticeable health effects.

What's special about coconut oil is it's mid-chain fatty acids, or MCFAs.

We want to note that mainstream studies show these essential fatty acids have a powerful antioxidant affect, as well as a documented healing effect on dental health, heart disease, high cholesterol, diabetes, arthritis and other chronic infections. There is also a weight-loss effect because this fat is metabolized differently than most other fats.

These findings are curiously under reported.

I know fats are usually evil in most diets, but the more modern thinking is that some fats are essential. There are good fats and there are bad fats. For example, the really bad fats would be the trans-fats. Most people know that.

Some people even hold that butter is better for you than margarine. Which it is, if you compare the types of fats in each. Margarine has loads of trans-fats. Butter, on the other hand, has almost no trans-fats and a small amount of the healthy MCFAs.

The fat with the highest amount of good MCFAs, by far, is coconut oil, followed by palm oil.

In the book, The Coconut Oil Miracle by Bruce Fife, the one must-read chapter is chapter number two on understanding fats.

I gained a vital piece in the puzzle of good health for diabetics from reading this chapter.

The challenge with this coconut oil diet is adding the daily 2 to 2 1/2 tablespoons of coconut oil that is recommended. I have managed to do so for short stretches and felt wonderful for doing so. But having my eggs taste like coconuts is a little odd.

Fortunately, the above-mentioned book does give some recommendations on this dilemma. The main one being to try different brands, as the flavor varies a lot. Also, counter intuitively, the REFINED coconut oil is not damaged by the added refining heat and the tell-tale coconut taste goes away!

Currently, my favorite method of ingesting coconut oil is mixing it with warmed up V-8 juice. Another is mashing it together with peanut butter or almond butter, and then combining them with unsweetened shredded coconut or ground flax seeds, and even cocoa powder.

Kind of a refrigerator cookie, only way healthier!
